Healthy Dish For The Weak: Chicken Crust Pizza.

I love pizza. I don't eat it often. But I love it. 

I do eat chicken often. But there are only so many times you can have chicken and avocado on tortillas. So when I saw a fellow Bikram teacher post a recipe for pizza crust made from chicken, I knew I would have to try it right away.

  • 1 pound of chicken breasts
  • 1 quart of chicken stock
  • 2 eggs
  • 1/2 tsp red chili pepper flakes
  • 1/2 tsp of oregano
  • Garlic salt
  • Black pepper

Pre-heat oven to 350 degrees.
Prep a pizza pan or baking sheet with parchment paper.

Step 1: Poach chicken breasts in the chicken stock. Let them cook away for about 20 minutes over medium heat. Take them out and let them rest for a few minutes. They should be cooked through. Cube the chicken.

Step 2:  Use a food processor to break the chicken down into crumbs.

Step 3: Combine the chicken crumbs with two eggs and the spices in a bowl. Mix together.

Step 4: Press mixture into the pan. Or free-form a shape, like I did. Bake for 25 minutes, or until the edges turn brown.

Step 5: Top with sauce and cheese. And whatever else you want. Bake for about 15 to 20 minutes.

Step 6: Pull out and let rest.

Step 7: Slice and consume. Preferably with a glass of red wine. Just like I did.

Step 8: Realize so much protein in a meal will feel you up quickly. Pack away the all of the leftovers for dinner this week.

Step 9: Feel good about eating such a non-carb meal, eat 4 cherry-flavored licorice sticks from the candy aisle at Sprouts.

Step 10: While the carb intake may be high... The licorice sticks have gelatin in them. Which is made from animal protein. Which must magically counteract the carbs from the sugar.

Step 11: Feel superior to all other people eating pizza for dinner tonight.
